Most mornings I wake up hun-gry, and these are a good grab to have with coffee. These muffins were very simple to make, and have the fiber, protein and fat that a breakfast should have. I adapted the recipe from The Farmhouse Movement recipe.
Chocolate Protein Breakfast Muffins Recipe
*To make oat flour: Measure out 1 1/2 C rolled oats, and blend in food processor or high-speed blender. You can also buy oat flour, buuut this is cheaper and easier.
*For the protein powder, it is best to use a good quality, plant-based protein powder. OWYN (click!) is my favorite because it doesn't have artificial sweeteners, it's nut-free, it tastes good, annnd it has a boost of fruit, vegetable, and seed nutrients! Can buy on their website or Amazon. com. Other options to find locally: Simple Truth, Orgain, Garden of Life, or Vega to name a few. Or, just use what you have. :)
This recipe makes 9 regular-sized muffins.
What You Need:
-1 C mashed, ripe banana: I didn't have any week-old bananas and the store's bananas were all green, so I used one bunch of the baby red bananas (so cute!).
-1 egg, beaten
-4 Tbsp. pure maple syrup
-3 Tbsp. melted & cooled coconut oil or butter
-1 tsp. pure vanilla extract (I used @edie.etta! #TheBest)
-3/4 C oat flour
-1/2 C protein powder (I used OWYN Chocolate Protein Powder)
-1 tsp. baking soda
-1 tsp. baking powder
-1 tsp. ground cinnamon
-1/2 tsp. salt
-1/2 C 72% dark chocolate chips (...0r 60%+)
What You Do:
1. Preheat oven to 350F. Grease muffin pan or place muffin liners in tin.
2. Mash banana in bowl with fork. Beat in egg. Add maple syrup, pure vanilla extract, and melted (but cooled off) coconut oil or butter.
3. Mix together the oat flour, baking soda, baking powder, salt, cinnamon, and protein powder. Add to wet ingredients. Mix. Stir in chocolate chips.
4. Using an icecream scoop, fill scoop and plop into each liner.
5. Bake for 15 minutes, or until a knife is inserted and comes out clean.
6. Let cool. Cover or place in airtight container. Good for four days.
When ready to eat, I highly recommend a scoop of Sunbutter (or whatever nut/seed butter you enjoy), some fresh fruit, and a cup of hot coffee to go with it. Mmm!

-Hitting a breaking point in Columbus and deciding to move back home earlier than planned with just my gut feeling and hope... Yikes! #LowestLow
-Stress from being away from Zach/driving back and forth weekly
-Frustration with things not going as planned and people disappointing me
-Anxiety that continued from two years ago. Anxiety from unknown (jobs, where we would live, test results, figuring myself out, etc.)
-Stress from juggling part-time jobs and Z being in school
-Getting upset about acne...
-The flu... Shew!
-A couple bad hangovers... S/o to Wendy's
